Vallisto, Cafayate Malbec (2013)
- Grape: Malbec
- Geography: Salta, Argentina
- Appellation: Cafayate
Cafayate is a town located at the central zone of the Valles Calchaquíes in the province of Salta, Argentina. It sits 1,683 metres (5,522 ft) above mean sea level, at a distance of 189 kilometres (117 mi) from Salta City and 1,329 kilometres (826 mi) from Buenos Aires.
The grapes were hand picked in 20kg baskets When the fruit arrives at the winery we do a cluster selection in a sorting table rejecting leaves and dehydrated clusters. Once in the tank we do a cold soaking for 3 to 4 days between 8 and 10 c to get more fruit character. We inoculate with selected yeasts. During early stages of fermentation we pumpover 3 times a day the volume of the tank. Then, we only move the wine everyday to wet the hat, macerating for one or two weeks more. Finally we run-off the wine once all the good components were extracted from the skins. We naturally let the wine finish malolactic fermentation. Then, 50% free run wine is aged for 12 months, using 225 and 500 liter French barrels hand crafted with oak from the Allier forest with a very soft toast. The other 50% of the wine is aged in concrete vats, also for 12 months.
The vineyards grow on rich loamy soils with a deep rocky subsoil, on the Western slope of Mount Punta Alta, which protects them from excessive sun exposure. Standing at more than 1,900 metres above sea level, the vineyard benefits from the coolness afforded by high altitudes, even during heat waves.
Very elegant, but full of power and complexity. Spicy on the nose, with oaky notes and bitter chocolate, big black fruits and peppery in the mouth. Big and rich, but with a gentle acidity, with soft and opulent tannins.

Zardini, Zardini Valpolicella Classico Superiore (2016)
- Geography: Veneto, Italy
- Appellation: Valpolicella
This Valpolicella comes from a classic blend of pink grape vines of the Veneto region, Corvina (which is found in the final cut with the highest percentage) Rondinella and Molinara. The land where the vines grow are predominantly red and brown, characterized by the presence of calcareous marl and basalt. In the vintage Pietro Zardini selects only the best grapes, and the must obtained after pressing the grapes ferments in steel, macerating on the skins for 15-20 days. The aging lasts 8-10 months in oak barrels, and then the wine is left to rest for a few months in steel. The Valpolicella Zardini is revealed to the eye with a ruby color. The range of aromas that surrounds the nose tells a fine progression of aromas of ripe fruit, enriched by more floral sensations and touches of officinal herbs. When tasted it has a light body tending to medium, with a wide and enveloping, agile sip, characterized by a perfect balance between taste and smell. A bottle to which Pietro Zardini is particularly attached, which is appreciated every day on the table in combination with different land recipes.
Bright ruby red color
Perfume Fruity and elegant, with hints of ripe red fruit, flowers and medicinal herbs
Taste Soft, lean, rich and fruity, with good balance
Blanquito, Rías Baixas (2017)
- Geography: Spain
- Appellation: Rías Baixas
This is a wine of heights with mystical resonances. Their particular idea of paradise transmits to us from 12th Century the essence of the wine culture of the monks of Tui.
The sandy granitic soil makes it possible to obtain very fine wines, fully capable of highlighting to the maximum the aromas inherent in the varieties.
The vineyard is located in Vilachán (Tomiño-Pontevedra), at 42 degrees North, 8 degrees 46′ West at between 200 and 350 m above sea level. It is situated 3 1/2 km from the river Miño and 10 km from the Atlantic Ocean. The vineyard is on a south facing slope between the rivers Bravos and Pego.
Although close to the sea and the River Miño, being located on a gentle slope means that neither the mist nor the cold to be found on the hilltops affect the vineyard.
A southerly aspect guarantees good sunshine which allows optimum ripening of the grape.
This wine is a plurivarietal of the different zones of Rias Baixas in which We use different varieties, mainly Albarino, Treixadura, Caino, Loureiro and Godello from Rosal, Salnes, Ulla and Condado. Harvest separately and manual of the different varieties once the grape has reached its optimum point of maturation. Crushed, destemmed and cold macerated. Fermentation at controlled temperature until transform into wine, variety by variety, after having the wines of the different finished varieties, we make the coupage. There is room for a singular wine full of nuances.
Color: Straw yellow with greenish reflections.
Nose: Clean on the nose good intensity, fresh, aromas of fruit with notes floral.
Palate: Tasty, balanced, fresh, cheerful on the palate, with notes of fruit and a subtle floral drop at the end of the mouth.

This limited release from our friends in Brooklyn is perfectly suited for the season. Campfire is comprised of a blend of three straight whiskies aged in a variety of barrels. The smoked wheat whiskey, smoked corn and peated bourbons each contribute a different level of fire that combine for a more nuanced delivery of smoke character, balanced well by the barrel sugars. We’ll definitely be curling up next to this dram while it lasts.
